Homemade Ice Cream Sandwiches

Homemade Ice Cream Sandwiches . . . at least that's what we call 'em! My boys love this SWEET treat so I make them a lot. I posted a pic on Instagram last time we had them and had some requests for the recipe:

Cakees {aka: The Sandwich Part} pronounced "cake-ease" ;)

1 box Pillsbury Devil's Food Moist Supreme Premium Cake Mix
2 large eggs
1/2 cup vegetable oil
1/2 cup Reese's peanut butter chips (OPTIONAL)

Set oven to 375*. Mix all ingredients in bowl with wooden spoon. (It takes a little elbow grease!) Drop by tablespoon-fulls onto greased baking sheet. Bake for 8-10 minutes. Remove from oven and let cool before moving cookies onto cooling rack. (If they're a bit too fluffy for your liking, just flatten them with a spatula while they're still hot.) Makes: about 24 cookies.

Filling {aka: The Good Part}

1 heaping helping of your favorite ice cream (pictured above is Blue Bunny Homemade Vanilla & Chocolate Swirl ice cream. I also like mine with good old JIF peanut butter instead of ice cream.)

Drop it right on to a cooled Cakee and top with another cooled Cakee. ENJOY!
