Baked Pumpkin Oatmeal

We are thoroughly enjoying Monsoon Season here in the Valley of the Sun!
The rainy weather has been beautiful and makes me excited for the months ahead.
To celebrate the return of Fall, I had to break out some pumpkin
Here's how I make this warm, gooey deliciousness:
It's so easy to make! I just throw everything in a bowl and mix it up.
Our favorite way to top this little piece of pumpkin heaven is with maple syrup and whipped cream.
You can also add milk to make it creamier and some chopped walnuts for crunch.
 I think I need to go pre-heat my oven . . .   ;)
